Our Kolsch-inspired ale. This batch features a light dry-hop with Loral hops leading a subtle citrus and floral note on top of the crisp kolsch base beer. ~ 5.3% ABV
Munich-style Dunkel Lager brewed yearly to celebrate the Oktoberfest season. Munich malts contribute a rich, bready character that is balanced by the German noble hops. Our house lager yeast keeps it crisp and drinkable. ~ 5.3% ABV
English Brown Ale with Pistachio flavor. Malty and biscuity flavors are the foundation that gets layered with nutty and sweet notes of pistachio, combining to make flavors reminiscent of pistachio cake, toasted almonds, and toffee. 5.1% ABV
Classic American Pale with balanced malt and hop character featuring Cascade hops. 5.7% ABV
American Pale Ale with grapefruit and Citra & Mosaic Hops ~ 5.5% ABV
West Coast IPA with Blood Orange. Brewed in collaboration with our friends at Rock Island Public House to celebrate both business' 10th Anniversaries. A healthy dose of blood orange along with 10 different hop varieties were added to celebrate the occasion. 6.6% ABV
Double Dry Hopped Hazy IPA with Mosaic and Citra Hops ~ 6.5% ABV
Our long-time house IPA makes its' triumphant return! This west coast IPA is jam packed with Centennial, Cascade, Simcoe, and Falconers Flight Hops for notes of pine, grapefruit zest, apricot, and gummy berries. Just like the classic IPAs before the hazies took over, this one has a bitter and semi dry finish. We're thrilled to have this staff and fan favorite back on tap! ~ 7.2 % ABV
Inspired by the New Orleans Coffee blend, our imperial milk stout uses a blend of chicory and single-origin Honduras coffee beans roasted locally by 4 Letter Word Coffee. 8% ABV
Hand crafted artisanal cocktails are a specialty at Horse Thief Hollow. We source from local distilleries when possible and incorporate our own house made spirits and syrups infused with herbs, fruit, vegetables, and spices.
Handcrafted with a blend of bourbons including Elijah Craig, along with Demerara sugar & Luxardo cherry juice, and served with a garnish of cherry & orange peel. Neil aged it in an 18th Street Distillery bourbon barrel, to impart richer flavors & aromas as the elements mingle. It’s our unique way of elevating Chicago’s favorite cocktail.

Figs were made for fall, and this Manhattan features Journeyman Field Rye infused with Black Mission figs, Starlino sweet vermouth, honey bitters, and cherry juice. Award-winning Field Rye celebrates Chicago history and the 125th anniversary of the iconic Field Museum. We’ll drink to that!

Napa Valley, California. Flavors of freshly picked raspberries and strawberries explode across the palate with subtle hints of peppery spice and tea. The mouthfeel is supple, rich, and elegant.
Paso Robles, California. Offers aromas of ripe strawberry and red cherry framed by a touch of oak. Supple and open-knit on the palate, with a juicy core of fruit and light structuring tannins, and a long finish.
California. A favorite that marries rich, complex flavors of blackberries and plum with a touch of black pepper while supple tannins give way to a long, smooth, finish.

Uco Valley, Argentina. Intense red with violet colors. Notes of red currants, cherries and cinnamon.
Dry Creek Valley, California. This vintage presents enticing aromatics of dried cranberry and boysenberry with hints of cocoa powder, nutmeg, dried sage, and cedar.
Dry Creek Valley, California. Aromas of pineapple and ripe pear with some floral notes. Flavors of Meyer lemons, tangerines and mineral notes come through, with a lively and slightly creamy finish.
Sonoma, California. Hints of caramelized oak and vanilla flavors make for a well-rounded Chardonnay with great balance and lingering viscosity. A glass full of lemon shortbread to the nose, sips like lemon cream pie with a light touch of cinnamon and nutmeg.
Salorno, Italy. Aroma rich in fruit, with striking notes of pear and apple. Dry and smooth on the palate with a pleasant, mineral aftertaste.
Veneto, Italy. Dry, sparkling, white wine that is intensely aromatic and complex, as well as fragrant and fruity with flavors of apples and pears.
France. Fresh and deliciously fruity wine with a soft side. Resplendent with ripe berry flavors and warm acidity, along with a lively, sunny character.
Colombia Valley, Washington. Lively citrus flavors frame the palate with honey and pear, with lemongrass aromas complemented by lilac.
