American Pilsner brewed with 100% malted barley ~ 5.2% ABV
Zwickelbier, or unfiltered kölsch. A Great American Beer Festival bronze medal winner and one of HTH’s first beers makes its yearly return. A crisp and clean lager-like ale ~ 5.5% ABV
A kettle-soured Gose brewed with cherry, lime peel, and salt ~ 4.7% ABV
Munich-style Dunkel. This lager features bready, toasty, and a slightly chocolatey malt character while also being smooth and refreshing ~ 5.3% ABV
American Pale Ale brewed with European and American hops ~ 5.7% ABV
Hazy Pale Ale featuring Citra & Sabro Hops ~ 5.9% ABV
Double dry-hopped Hazy IPA ~ 6.5% ABV
West Coast IPA ~ 7.2% ABV
Bier De Garde (a French farmhouse style), brewed with sweet potatoes, vanilla beans, and spices. A warming dark amber colored beer, Cheval is perfect for the cold weather months ~ 5.8% ABV
Milk stout with chicory and coffee. Inspired by the New Orleans coffee blend ~ 6.9% ABV
Belgian-style Tripel brewed with French Pilsen malt & American hops, fermented with a classic Belgian Trappist yeast, then aged 8 months in Wren Hop Pinot Noir barrels of 100% French oak. Flavors of vanilla, spice, and honey complement underlying notes of white grape, pear, orange peel, and clove. Finishes slightly sweet, warming & tannic ~ 10% ABV
Bourbon barrel aged imperial milk stout with cinnamon and vanilla ~ 10.6% ABV
Hand crafted artisanal cocktails are a specialty at Horse Thief Hollow. We source from local distilleries when possible and incorporate our own house made spirits and syrups infused with herbs, fruit, vegetables, and spices.
Citadelle Gin, chamomile liqueur, honey bitters, a splash of pineapple juice & dry cider capture the flavors of fall.
White sangria made with Maryhill Riesling, Apologue Saffron liqueur, Gran Gala, and Prairie vodka, with freshly pressed fruit.
Pinot Noir, Allspice Dram, Hine Cognac, & Gran Gala with freshly pressed citrus fruit & cherries offer a riot of flavor and color to complement the season.
Cruz de Fuego Espadin Mezcal, Luxardo Amaretto, allspice liqueur, lemon, and THE best ginger beer create a very festive & distinctive mule.
Koval Rye, Briottet Raspberry liqueur, Mr. Black Cold Brew liqueur, and chocolate bitters create the dessert-of-your-dreams style old fashioned.
Hine Cognac, ginger liqueur, fresh pineapple, and orange juice, with cream of coco and fiery bitters unite to create a more seasonal variety of the popular tiki cocktail 'The Painkiller'.

Napa Valley, California. Flavors of freshly picked raspberries and strawberries explode across the palate with subtle hints of peppery spice and tea. The mouthfeel is supple, rich, and elegant.
Sedona, California. Nuances of ripe plums, vanilla, and cocoa are showing with a slight dose of oak and toast.
California. A favorite that marries rich, complex flavors of blackberries and plum with a touch of black pepper while supple tannins give way to a long, smooth, finish.
Uco Valley, Argentina. Intense red with violet colors. Notes of red currants, cherries and cinnamon.
Paso Robles, California. Offers aromas of ripe strawberry and red cherry framed by a touch of oak. Supple and open-knit on the palate, with a juicy core of fruit and light structuring tannins, and a long finish.
Dry Creek Valley, California. This vintage presents enticing aromatics of dried cranberry and boysenberry with hints of cocoa powder, nutmeg, dried sage, and cedar.
Colombia Valley, Washington. Lively citrus flavors frame the palate with honey and pear, with lemongrass aromas complemented by lilac.
Veneto, Italy. Dry, sparkling, white wine that is intensely aromatic and complex, as well as fragrant and fruity with flavors of apples and pears.
Salorno, Italy. Aroma rich in fruit, with striking notes of pear and apple. Dry and smooth on the palate with a pleasant, mineral aftertaste.
France. Fresh and deliciously fruity wine with a soft side. Resplendent with ripe berry flavors and warm acidity, along with a lively, sunny character.
Dry Creek Valley, California. Aromas of pineapple and ripe pear with some floral notes. Flavors of Meyer lemons, tangerines and mineral notes come through, with a lively and slightly creamy finish.
Sonoma, California. Hints of caramelized oak and vanilla flavors make for a well-rounded Chardonnay with great balance and lingering viscosity. A glass full of lemon shortbread to the nose, sips like lemon cream pie with a light touch of cinnamon and nutmeg.
