In our 10th year of brewing on Chicago’s South side, we earned our 10th craft beer award. Little Wing Pilsner captured gold medals at the World Beer Cup this Spring & at the Great American Beer Festival this Fall. Cheers to that!

Neil and his team spent months working on the new design for our four flagship beers at HTH: Little Wing Pilsner, Spoonful Hazy IPA, Boogie Chillen’ Grapefruit Pale Ale, and Delta Hurricane Imperial Milk Stout. The development process involved an intensive study & fusion of illustration, typography, colors & copywriting. (Who knew Neil could write haiku?!) We’re incredibly proud of the results and invite you to take home a 4-pack of your favorite style next time you visit HTH.

Neil Byers collaborates with local high school to raise Angus beef for his kitchen

Innovative food sourcing is what happens when a brewpub is run by an outdoorsman, hunter, and nature lover, as well as a chef and brewer. HTH is proud to raise our own Angus steer to provide fresh beef for our customers to enjoy. Our cows grow to market weight on a diet of spent brewers’ grain and fresh grass about a mile away from us, at the Chicago High School for Agricultural Sciences.

Horse Thief Hollow has captured 10 medals and counting in prestigious beer competitions

We brew great beer and have the bling to prove it. Our Little Wing Pilsner is a multi-award winner! It won Gold Medals twice in 2023, in the Great American Beef Festival and the World Beer Cup, known as the Olympics of beer. It also snagged a Bronze Medal in the 2020 Great American Beer Festival. Our Belgian Tripel Wrenly Rose won Gold at the Festival of Wood & Barrel-Aged Beer. We also brought home the Gold in the 2018 World Beer Cup and a Silver Medal in the 2017 Great American Beer Festival for our French farmhouse ale Bière de Voleur, or Thief’s Beer. In 2016, we earned Bronze in the Great American Beer Festival for our Prunckle’s Dunkel, a dark German lager with nutty malted sweetness. We also snagged first place in the 2016 Festival of Barrel Aged Beers for a Bavarian wheat beer called Hilltop Weizenbock. The 2014 World Beer Cup awarded us a Silver Medal for our Cheval Deux, a fall seasonal French brown ale infused with sweet potato. And we earned a Bronze for our signature 18th Rebellion Kolsch Ale, a Zwickelbier, at the 2014 GABF.

Little Wing Pilsner

Our multi-award winning flagship lager. Crisp, clean, refreshing, Little Wing combines American malt with German Tettnang hops to delight your tastebuds. ~ 5.2% ABV

Space Face

Kolsch inspired, brewed with an exceptionally clean Norwegian yeast strain resulting in a very lager-like ale. A crisp and dry malt profile gives way to delicate notes of peach and raspberry from German Callista hops. ~ 4.8% ABV

Kitchen Sink

Classic American Pale Ale with a caramel malt backbone featuring a load of hops with Cascade at the forefront. ~ 5.3% ABV

Paddle Head

Hazy Pale Ale with notes of tropical melons, fruit punch, and pear. Paddle Head features Michigan-grown hops including Vista, Mackinac, and Copper along with PNW-grown Citra hops to round it all out. ~ 5.8% ABV

Double Dry Hopped Hazy IPA with Mosaic and Citra Hops ~ 6.5% ABV

Soul Train: Boysenberry & Vanilla

This batch of our rotating Kettle Sour Ale is loaded with boysenberry for a tart and jammy delight with a light touch of vanilla to give an impression of slight sweetness. A complex, yet balanced profile with just the right amount of acidity. ~ 5.6% ABV

Cheval Deux

12 oz snifter ~ 7; 64 oz growler ~ 30

The Cheval Deux starts as French Amber Ale that is blended with Neil's signature sweet potato reduction. The resulting beer has notes of cinnamon and sweet potatoes that give way to flavors of ginger bread, smooth vanilla, sweet caramel, brown sugar, and graham crackers. ~ 5.6% ABV

West Coast IPA featuring citrus and pine notes with a firm bitterness and semi-dry finish. ~ 7.2% ABV

Cinnamon Girl

Our Bourbon Barrel-Aged Imperial Milk Stout with Vanilla & Cinnamon makes its triumphant return after 2 years and it's one of our favorite batches yet! Rich, complex, and boozy, Cinnamon Girl boasts flavors of S'mores, chocolate-covered espresso beans, caramel, bourbon, and oak, with a warming cinnamon finish. 11.3% ABV *contains lactose*
