Our Brews

At Horse Thief Hollow, we offer a selection of handcrafted brews every day, including at least one unique seasonal beer. Our mainstays are listed below. We’re also inspired to brew specialty beers for community events or causes. All of our craft beers feature the finest fresh milled barley and hops, plus unique strains of yeast. And because we don’t believe in waste, we use our spent grain to make our popular malty soft pretzels. (Which are delicious with a pint of beer!)

18th Rebellion

A refreshing, unfiltered German ale, 18th Rebellion has a lemony, slightly sweet nose and peppery finish. This Kolsch style ale is carefully fermented to be light and crisp, and it received a Bronze medal at the 2014 Great American Beer Festival.

Kitchen Sink

An American Pale Ale, born out of friendship and humor. Why is it called Kitchen Sink? Because it’s made with a collage of hops from around the world, blended with a copper colored malt profile and a touch of Rye.

Annexation Ale

This American style India Pale Ale (IPA) has a pine and citrus hop profile and medium copper body. If you like strong, bold, and hoppy, Annexation Ale is for you.

Beer Flights

Beer flights are a great way to sample what’s on tap. Choose any six varieties, and we’ll pour you a flight of 4-ounce glasses for just $8. When you’ve picked your favorites, you can take them home in a 64-ounce growler. Or, if you’re having a party, a keg. We offer a 1/6-barrel keg, which holds just over 5 gallons of beer, as well as a full keg that holds 15.5 gallons of suds.

Our beers feature the finest fresh-milled barley, specialty yeasts, and hops sourced locally and from around the world. We take great pride in brewing our beer right here in Beverly, on Chicago’s South side. Come see us, and taste that pride for yourself.

Little Wing

American Pilsner brewed with 100% malted barley that hearkens back to lagers brewed before Prohibition. Biscuit maltiness and balanced hop bitterness make this beer refreshing and drinkable. ~ 5.2% ABV, 22 IBU. 16. oz. pint.

Hefewestern

Traditional German Hefeweizen with mild clove and banana notes from the traditional German yeast. Smooth, bubbly, and naturally cloudy. ~ 5.0% ABV, 15 IBU. 16 oz. Weizen glass.

Ridge Rider

An American Pale Ale brewed with late additions of Citra and Mosaic hops to make this beer refreshing and juicy ~ 5.8% ABV, 78 IBU. 16 oz. pint

Summer in SoHa

Milkshake Pale Ale brewed with vanilla, lactose, and over 60lbs of fresh picked raspberries from South Haven, Michigan. Neil and Annie hand-picked the raspberries. ~ 5.3% ABV, 85 IBU. 16 oz. pint

Southside Jorts Party

Collaboration with fellow southsiders at Whiner Beer Company. This brew blends pineapple and funky flavors from a 100% brett fermentation in stainless with tangy lemon notes from HTH’s house lactobacillus barrels. We then kicked it up with aggressive dry hopping to create a Sour IPA that will blow the bottom half of your jeans off. Pairs well with denim. ~ 6.2% ABV, 100 IBU. 16 oz. pint

Spoonful

A hazy IPA brewed with oats and hopped Centennial and Zythos hops and dry-hopped with a tremendous amount of Citra and Cryo-Mosaic hops. This IPA pours hazy and has big, juicy citrus, mango, pineapple and pines notes that dominate the nose and finish! ~ 6.5% ABV, 100 IBU. 16 oz. pint.

Annexation

An American IPA with a piney and citrusy hop profile and and a medium copper body. Strong, bold, and hoppy. ~ 7.2% ABV, 67 IBU. 16 oz. pint.

Kitchen Sink

This Pale Ale dates back to Neil’s home brewing days, a time when money was short to come by, but adventure was not. A juicy burst of hops gathered from around the world balances with a select grain bill and a touch of flaked rye. ~ 5.7% ABV, 45 IBU. 16 oz. pint.

Wasserwolf Jager

A Couple Two Tree

This beer is a blend of three different beers: a Barleywine and Weizenbock that were aged in Buffalo Trace bourbon barrels and a touch of non-barrel aged old ale. ~ 9.25% ABV, 45 IBU, 12 oz. snifter.

A Coffee Two Tree

A strong Dark Ale that is a blend of barrel-aged Barleywine, barrel-aged Weizenbock, and Old Ale, briefly aged on Guatemalan coffee roasted in house by Hardboiled Coffee Company. ~ 9.25% ABV, 45 IBU. 12 oz. snifter.
